Upside down tart with hidden caramelised pears.
Ingredients:
  • 3 small Williams' pears, peeled, halved, cored
  • 21.00 gm lemon juice
  • 140g caster sugar
  • 40g butter, cubed
  • 1 sheet (25cm) ready-rolled frozen puff pastry
  • Thickened cream, to serve
Instructions:
  • Preheat your oven to a toasty 200°C. In a spacious bowl, lovingly drizzle the pears with fresh lemon juice. Sprinkle in 1/4 cup (55g) of sugar and gently mix until fully combined.
  • In a 15cm base measurement ovenproof frying pan, simmer the rest of the sugar over low heat until it melts and turns into caramel, stirring occasionally for 5-7 minutes. Place the pears around the pan, add dollops of butter, and cook for an additional 5 minutes until the pears are tender. Take the pan off the heat.
  • Lay pastry sheet on a clean surface and trim it into a 20cm round disc using a small, sharp knife. Gently place it over the pears, folding any extra pastry underneath. Bake until the pastry is golden brown and puffed, about 30 minutes. Let it rest for 10 minutes, then flip it onto a serving platter. Enjoy warm or at room temperature with cream.
