Pearl barley, herb & lamb salad

Ingredients:
  • 275.00 gm pearl barley
  • 1 bunch rocket
  • 1 treviso lettuce, leaves torn
  • 200g grape tomatoes, halved
  • 4 shallots, sliced
  • 2 x 200g lamb loin eye fillets
  • 86.63 gm lemon juice
  • 1 bunch basil, leaves torn
  • Greek Style Yoghurt, to serve
  • Lemon wedges, to serve
Instructions:
  • Prepare pearl barley as directed on the packet, then drain. Mix the barley with arugula, treviso lettuce, grape tomatoes, and shallots.
  • Preheat a chargrill pan over medium-high heat. Grill lamb loin eye fillets for 4-5 minutes on each side until cooked to your desired doneness. Slice before serving.
  • Toss the salad with lemon juice and basil, then top with Greek-style yogurt and lemon wedges before serving.
