Make pumpkin pie bliss balls with spiced pecans for a delicious twist on a classic dessert.
Ingredients:
  • 225g butternut pumpkin
  • 150g chopped pecans
  • 95g shredded coconut
  • 54.00 gm maple syrup
  • 2.50 gm mixed spice
  • 40.00 ml pepitas (pumpkin seeds)
Instructions:
  • Prepare the 225g of butternut pumpkin by seeding, peeling, and chopping it; steam until tender, then cool. In a food processor, finely chop 150g of pecans, reserving 1/2 cup (60g) on a plate. Combine the remaining pecans with the pumpkin, shredded coconut, maple syrup, mixed spice, and pepitas in the food processor. Blend until smooth and well combined.
  • Shape 2 tablespoons of the pumpkin mixture into balls and coat them with the reserved pecans. Chill on a lined tray in the fridge for an hour or until firm. Keep in an airtight container in the fridge for up to a week.
