Delicious, crowd-pleasing dessert that's quick, easy and budget-friendly.
Ingredients:
  • 22 biscuits
  • 250.00 ml pecans, roughly chopped
  • 3 eggwhites
  • 215.00 gm caster sugar
  • 4.40 gm vanilla essence
  • 300ml thickened cream, whipped, to serve
  • extra pecans, to serve
Instructions:
  • Preheat your oven to 180°C and lightly grease a 23cm flan dish.
  • Add the biscuits to a food processor and pulse until they form rough crumbs. Transfer the crumbs to a bowl and mix in the pecans.
  • In an electric mixer, whip egg whites and salt until soft peaks form. Add sugar gradually, beating continuously until a thick, shiny meringue forms. Gently fold in vanilla, biscuits, and pecans.
  • Transfer the mixture into a pie plate. Bake for 20-25 minutes until crispy. Allow it to cool fully. Garnish with whipped cream and additional pecans.
