Easy and fast vanilla pecan meringue dessert with sliced peaches and whipped cream. Best when made ahead for maximum flavor infusion.
Ingredients:
  • 3 egg whites
  • 1 cup white sugar
  • 14 saltine crackers, finely crushed
  • 0.5 cup chopped pecans
  • 7 fresh peaches - peeled, pitted, and sliced
  • 2 cups sweetened whipped cream
Instructions:
  • Preheat the oven to 325°F (165°C), allowing it to reach the perfect temperature for your dish.
  • Whip egg whites in a large glass or metal bowl until stiff peaks form. Gradually add sugar while continuing to whip. Gently fold in saltines, vanilla, baking powder, and pecans. Spread mixture evenly into an ungreased 9-inch deep dish pie plate.
  • Bake in a preheated oven for 30 minutes or until a skewer comes out clean when inserted in the center. Remove from the oven and let it cool. The crust will puff and crack while cooling.
  • Once the crust has cooled completely, elegantly place the sliced peaches on top. Cover with aluminum foil to preserve their beautiful color until serving time. Finish off with a dollop of sweetened whipped cream right before serving.
