Create a mouthwatering treat by layering homemade peach ice cream, cobbler crumbles, and fresh peaches using Blue Diamond Vanilla Almond Breeze.
Ingredients:
  • 0.66666668653488 cup all-purpose flour
  • 0.25 cup white sugar
  • 0.75 teaspoon baking powder
  • 3 tablespoons cold butter
  • 2 tablespoons Blue Diamond Vanilla Almond Breeze
  • 0.5 cup white sugar
  • 2 tablespoons cornstarch
  • 4 large egg yolks
  • 2 cups Blue Diamond Vanilla Almond Breeze
  • 1 cup chopped, peeled fresh peaches
  • 1 cup peach jam or preserves, divided
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 (13.5 ounce) can coconut milk
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C. Combine flour, sugar, and baking powder in a medium bowl. Use a fork to cut in the butter until it resembles peas, then gently mix in 2 to 2 1/2 tablespoons of Almond Breeze.
  • Spread out on a parchment-lined baking sheet, break into 1/2- to 1-inch pieces, and bake for 15 minutes. Allow to cool before coarsely crumbling.
  • In a medium saucepan, combine sugar, cornstarch, and egg yolks. Gradually whisk in Almond Breeze and bring to a gentle simmer over medium heat, whisking consistently. Cook over low heat, stirring often, until slightly thickened. Allow the mixture to cool before using.
  • Combine peaches, 1/2 cup peach jam, vanilla and almond extracts, and coconut milk in a blender; blend until silky smooth.
  • Chill thoroughly, then transfer the mixture to an ice cream maker bowl and freeze following the manufacturer's guidelines.
  • Spread a delicious layer of ice cream in a 1-quart dish, like a loaf pan. Sprinkle small spoonfuls of the leftover jam and some of the crumble on top. Layer this heavenly combination multiple times, reserving some crumble for a beautiful garnish at the end, if you wish.
  • Freeze the dish until you're ready to enjoy it. Add small scoops of ice cream on top and sprinkle with the crumble.
