Traditional Southern spiced peaches for a sweet, festive treat anytime.
Ingredients:
  • 7 pounds white sugar
  • 1 quart water
  • 2 cups distilled white vinegar
  • 19 pounds firm ripe peaches
  • 3 tablespoons crushed cinnamon stick
  • 24 whole cloves
Instructions:
  • Check quart- or gallon-sized jars for cracks, and rings for rust, discarding any defective ones. Submerge in simmering water for at least 5 minutes. Wash new lids and rings with warm soapy water.
  • In a large pot over medium-high heat, bring sugar, water, and vinegar to a boil until a moderately thick syrup forms. Add peaches, cinnamon, and cloves and continue to boil, stirring occasionally, until peaches are fork-tender.
  • Fill sterilized canning jars with luscious peaches. Keep boiling the syrup until it thickens, then pour it into the jars to fully cover the peaches, leaving a quarter inch of space at the top. Gently run a clean knife or thin spatula along the insides to release any air bubbles. Use a moist paper towel to wipe the rims clean. Seal with lids and screw tightly for freshness.
  • Place a rack in the bottom of a large stockpot filled halfway with water and bring to a boil. Using a holder, carefully lower jars 2 inches apart into the boiling water. Add more boiling water until jars are covered by 2 inches. Cover the pot, bring to a rolling boil, and process for 35 minutes.
  • After cooking, place the jars on a flat surface covered with wood or cloth, making sure they are spaced apart. Leave them undisturbed for 12 to 24 hours. To check for a proper seal, press the center of each lid gently. Remove the rings and store the jars in a cool, dark place.
