Peggy's Frosted Banana Bars

Make delicious banana cookie bars topped with creamy vanilla cream cheese frosting.
Ingredients:
  • 0.5 cup butter, softened
  • 2 cups white sugar
  • 1.5 cups mashed bananas
  • 3 eggs
  • 1 pinch salt
  • 1 (8 ounce) package cream cheese, softened
  • 4 cups confectioners' sugar
  • 2 teaspoons vanilla extract
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously butter a 10x15-inch rimmed baking pan.
  • Cream together 1/2 cup of butter and white sugar in a bowl using an electric mixer until smooth and creamy. Add bananas, eggs, and 1 teaspoon of vanilla extract; continue beating until well combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Incorporate this mixture into the banana batter and thoroughly combine. Transfer the mixture into the greased pan.
  • Bake in the preheated oven for 25-30 minutes until a toothpick comes out clean. Cool on a wire rack for 5 minutes, then run a knife around the edges and carefully invert onto a serving plate or cooling rack. Let cool for about 30 minutes.
  • Using an electric mixer, whip together cream cheese and 1/2 cup of butter in a bowl until fluffy. Gradually mix in confectioners' sugar and 2 teaspoons of vanilla extract. Spread the frosting over the cooled bars and sprinkle with walnuts.
