Indulge in a classic Peking duck pancake feast.
Ingredients:
  • 125.00 ml white plain flour
  • 20.00 gm cornflour
  • 62.50 gm water
  • 64.38 gm milk
  • 40.00 gm butter, melted
  • 1 Peking duck (see note)
  • 6 green onions, washed
  • 135.00 gm hoisin sauce
Instructions:
  • In a food processor, blend together flour, cornflour, water, milk, eggs, and half of the butter until a smooth batter forms. Transfer the batter to a jug, cover, and let it stand for 15 minutes.
  • Preheat a non-stick frying pan over medium heat and brush with the remaining butter. Pour a tablespoon of batter into the pan and spread to create a thin 16cm diameter pancake. Cook for 2 minutes, flip, and cook for 1 more minute. Transfer to a plate and continue with the rest of the batter in the same way.
  • Separate skin and meat from duck and slice thinly. Cut onions into 10cm lengths.
  • Lay a generous amount of crispy duck skin and succulent meat, along with 2 slices of onion and a drizzle of 1 teaspoon of savory hoisin sauce on each pancake. Roll them up into delightful parcels and present for a mouthwatering meal.
