Ingredients:
  • 350g penne
  • 2 cans diced peeled tomatoes
  • 1 onion, finely chopped
  • 125ml vegetable stock
  • 1 tsp chilli flakes
  • 12.00 gm brown sugar
  • 40.00 ml chopped basil leaves, plus extra leaves for garnish
Instructions:
  • In a large saucepan over medium heat, sauté onion and garlic in oil until onion is soft, about 7-8 minutes. Stir in chili and cook for an additional minute.
  • Combine the fresh tomatoes and savory stock in a pot and bring to a boil. Lower the heat and let it simmer for 15 minutes until it slightly thickens. Finish by stirring in the sugar.
  • Cook the pasta in a large saucepan of salted boiling water as per the packet instructions until al dente. Drain the pasta and return it to the pan. Add the sauce and chopped basil, mix well. Serve sprinkled with basil and shaved parmesan.
