Elevate this classic Italian dish by adding spicy chili for a fiery kick or deseed for a milder taste. A guaranteed winter comfort favorite!
Ingredients:
  • 75.08 gm extra-virgin olive oil
  • 1 garlic clove, crushed
  • 2 small red chillies, chopped (see note)
  • 800g can diced tomatoes
  • 127.50 gm vegetable liquid stock
  • 125.00 ml small basil leaves
  • 400g penne rigate
  • 10.00 gm caster sugar
Instructions:
  • In a large saucepan over medium heat, heat oil. Add onion, garlic, and chillies. Cook and stir for 6 to 7 minutes until onion softens. Mix in tomatoes, stock, and 1/4 cup of basil. Let it gently boil. Lower heat to medium-low and simmer uncovered for 15 minutes.
  • Cook the pasta in a large saucepan of boiling, salted water according to package instructions until tender. Drain the pasta and return it to the pan.
  • Blend sugar into the tomato sauce. Season generously with salt and pepper. Drizzle the sauce over the pasta. Mix thoroughly. Let sit covered for 5 minutes to let the pasta soak up the flavors.
  • Finish by generously scattering the rest of the fresh basil over the dish. Divide the savory mixture among individual serving bowls and enjoy immediately.
