Whipped up a delicious penne pasta with crispy pancetta bacon and savory mushrooms for a quick lunch.
Ingredients:
  • 1 (12 ounce) package penne pasta
  • 1 (3 ounce) package pancetta bacon, diced
  • 2 tablespoons butter
  • 1 (10 ounce) package sliced mushrooms
  • 1 tablespoon minced garlic
  • 0.5 cup heavy cream
  • 0.25 teaspoon Italian seasoning
  • 0.25 cup grated Parmesan cheese, or to taste
Instructions:
  • 1. Boil generously salted water in a large pot. Cook pasta until al dente (8-10 minutes), then drain and set aside. Meanwhile, brown pancetta in a large skillet over medium heat until just crispy, for about 5 minutes. Drain on a paper towel and set aside.
  • Drain the pancetta grease from the skillet and swirl in butter. Turn up the heat to medium-high and toss in sliced mushrooms. Sauté until mushrooms are soft and juicy. Mix in minced garlic and cook for an additional 2 minutes. Lower the heat to medium-low and blend in cream and Italian seasoning. Let simmer until the sauce slightly thickens.
  • Combine the cooked penne with the sauce, then generously top with Parmesan cheese before serving.
