Penne with spicy sausage, ricotta, tomato, chilli & parsley

Whip up a quick and delicious spicy sausage pasta in just 30 minutes!
Ingredients:
  • 375g penne rigate
  • 3 (about 360g) chorizo sausages, thinly sliced diagonally
  • 2 large (about 300g) ripe tomatoes, finely chopped
  • 200g fresh ricotta, crumbled
  • 4 green shallots, ends trimmed, finely chopped
  • 2 small fresh red chillies, finely chopped
  • 120g feta, crumbled
  • 125.00 ml loosely packed coarsely chopped fresh continental parsley leaves
  • Freshly ground black pepper
Instructions:
  • Boil pasta in a large saucepan of salted water according to package instructions until al dente. Drain pasta well.
  • Preheat a non-stick frying pan over medium-high heat. Cook the chorizo, stirring occasionally, for 4 minutes until nicely browned. Remove from the pan and transfer to a plate.
  • In the same pan, heat the oil over medium-high heat. Stir in the garlic for 30 seconds until fragrant. Add pasta, tomato, ricotta, green shallots, chorizo, and chili. Gently toss until everything is well combined and heated through. Then, remove from heat.
  • Combine half of the feta and half of the parsley, gently toss together. Season with pepper, then transfer to a serving bowl. Sprinkle with the rest of the feta and parsley before serving immediately.
