Pepper Jack Cheese Quick Bread

Bake a savory quick bread in just 10 minutes for an unbeatable zesty aroma and flavor.
Ingredients:
  • 2 cups Gold Medal™ all-purpose flour
  • 1 cup shredded Monterey Jack cheese with jalapeño peppers (4 ounces)
  • 1 teaspoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup butter or margarine, melted
  • 2 eggs, slightly beaten
Instructions:
  • Preheat the oven to 350°F. Lightly grease the bottom of a 9x5x3 or 8 1/2x4 1/2x2 1/2-inch loaf pan with shortening or cooking spray.
  • Combine flour, cheese, sugar, baking powder, baking soda, and salt in a medium bowl. Gently fold in remaining ingredients until just combined (batter will be slightly lumpy). Transfer mixture to pan.
  • Bake until golden brown and a toothpick inserted in center comes out clean, 35 to 45 minutes. Let it cool for 5 minutes, then run a knife around the edges to loosen. Transfer to a wire rack and cool for 30 minutes before slicing.
