Delicious, flaky biscuits with a savory cornbread flavor and a hint of spicy pepper jack cheese. Ideal pairing for soups or stews.
Ingredients:
  • 2 cups self-rising flour (see Tip)
  • 1 cup yellow cornmeal
  • 2 tablespoons white sugar
  • 1 teaspoon baking soda
  • 1 stick (1/2 cup) very cold unsalted butter, cubed
  • 1.25 cups cold buttermilk
  • 2 ounces pepper Jack cheese
  • 2 tablespoons melted butter for brushing tops
Instructions:
  • Assemble all ingredients.
  • Combine self-rising flour, cornmeal, white sugar, salt, and baking soda in a bowl. Add cold, cubed butter and use a pastry cutter/blender to mix until the mixture is crumbly and the butter is the size of lentils.
  • Combine the buttermilk with a fork until a crumbly dough forms that can be easily pressed together with your hands.
  • Shape the dough into a 12 x 12-inch square, fold in half, and roll back out to a 12-inch square. Embrace any jagged edges and smooth them out with a bench scraper.
  • Quarter the dough and stack the pieces. Then, gently press the sides to square them up using a bench scraper. Finally, roll the dough back out to form a 12-inch square.
  • Preheat the oven to a toasty 425 degrees F (220 degrees C) and prepare a baking sheet with a Silpat mat.
  • Sprinkle grated pepper Jack cheese evenly over the dough. For a perfect melt, chill cheese briefly in the freezer before grating. Next, fold dough into thirds to create a rectangle shape and gently press down.
  • Roll the dough to a thickness of about 3/4 inch. Use a floured 2.75-inch round cutter to make 8 biscuits. Alternatively, you can cut the dough into squares.
  • Place the cut dough on the baking sheet, reshaping any leftover dough to make more biscuits if needed. Press your thumb lightly in the center of each biscuit and brush them with melted butter.
  • Place in the preheated oven until beautifully puffed and golden, for 18 to 20 minutes. For extra richness, brush with additional melted butter while warm. Allow to cool before serving. Bon appétit!
