Peppercorn Pork Tenderloin

Try this quick and delicious peppercorn pork tenderloin with apple juice for a perfect dinner for two in under 15 minutes.
Ingredients:
  • 1 teaspoon olive oil
  • 1/2 pound pork tenderloin, cut into 1/8-inch slices
  • 1/2 teaspoon crushed green peppercorns
  • 1/4 cup unsweetened apple juice
  • 1 tablespoon lemon juice
  • 1 tablespoon sour cream
  • Hot cooked orzo or rice, if desired
  • Chopped fresh parsley, if desired
Instructions:
  • In a 10-inch nonstick skillet over medium-high heat, heat oil until shimmering. Season both sides of the pork with peppercorns.
  • Brown the pork in oil for 1 to 2 minutes per side. Add apple juice and lemon juice to the skillet and cook over low heat for 2 minutes, or until pork is browned. Stir in sour cream until well combined.
  • Plate the pork and sauce on a bed of orzo, then garnish with a sprinkle of fresh parsley.
