Delicious stuffed bell peppers with chicken, rice, veggies, and gooey mozzarella - a perfect dinner any night!
Ingredients:
  • 2 large green bell peppers
  • 0.5 pound ground chicken
  • 1 cup cooked rice
  • 0.25 cup chopped onion
  • 1 cup tomato sauce
  • 0.75 cup shredded mozzarella cheese
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • Remove the tops of the green peppers and arrange them in a baking pan. Chop any pepper flesh around the stems and save it for later use. Remove and discard the seeds and stems.
  • Combine ground chicken, rice, onion, garlic, black pepper, salt, and diced peppers in a bowl.
  • Fill the green peppers with the chicken mixture and top with tomato sauce.
  • After 45 minutes in the preheated oven, generously top the peppers with mozzarella cheese and return to the oven until the filling is fully cooked and the cheese turns a golden hue, usually about 15 more minutes.
