Savory stuffed bell peppers filled with flavorful ground chicken, tomatoes, spinach, and rice.
Ingredients:
  • 4 medium bell peppers
  • 0.5 medium onion, diced
  • 1 pound ground chicken
  • 2 cups cooked rice
  • 1 (14 ounce) can crushed tomatoes
  • 1 (8 ounce) package frozen chopped spinach, thawed and drained
  • 0.5 teaspoon Italian seasoning, or to taste
  • salt and ground black pepper to taste
  • 2 tablespoons grated Asiago cheese, or to taste
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Remove the tops of the peppers and wrap them in aluminum foil. Dice any pepper flesh around the stems and set aside. Discard the stems.
  • Place the peppers in the oven and let them bake for 15 minutes until tender. Remove the peppers from the oven and carefully discard the foil once they have cooled down slightly.
  • In a skillet over medium-high heat, saute onions in oil until soft and slightly browned, about 5 minutes. Add chicken and cook until no longer pink, then toss in diced peppers until soft, about 2 to 3 minutes. Stir in cooked rice, tomatoes, and spinach until heated through, about 3 to 5 minutes.
  • Fill the peppers with a savory chicken and rice filling, then generously season with Italian herbs, salt, and pepper. Finish off with a generous sprinkling of flavorful Asiago cheese.
  • Place the peppers back in the oven until they are warmed through and the cheese is melted, approximately 15 minutes.
