Vibrant stuffed bell peppers with lentils, mushrooms, and spinach – a delicious vegan delight.
Ingredients:
  • 1 tablespoon olive oil
  • 0.5 cup chopped onion
  • 0.5 cup vegetable broth
  • 0.5 cup chopped mushrooms
  • 1 teaspoon Italian seasoning
  • 1 teaspoon red wine vinegar
  • 0.25 teaspoon crushed red pepper flakes
  • 1 cup cooked brown lentils
  • 1 cup torn baby spinach
  • 2 red bell peppers, tops removed, seeded
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • In a large skillet over medium-high heat, sauté onion in oil until soft. Pour in broth and cook for 3 minutes. Add mushrooms, garlic, Italian seasoning, vinegar, salt, and red pepper flakes; cook for 2 minutes. Remove from heat and mix in lentils and spinach.
  • In a baking dish, arrange the bell peppers and stuff them evenly with the filling. Cover the dish with foil.
  • Place in the oven that has been preheated and bake for 20 minutes. Remove the cover and cook for an additional 10 minutes until the peppers are as soft as you like.
