Vegan lentil "loaf" casserole: Sliced veggies, lentils, and non-dairy cheese layered to perfection.
Ingredients:
  • cooking spray
  • 1 medium zucchini, thinly sliced lengthwise
  • 1 medium onion, thinly sliced
  • 2 medium tomatoes, thinly sliced
  • 1 cup sliced fresh mushrooms
  • 0.5 cup canned lentils, drained and rinsed
  • 1 teaspoon garlic powder, or more to taste
  • 0.5 cup shredded vegan Cheddar cheese
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and generously grease a loaf pan with cooking spray.
  • Begin by arranging half of the zucchini, followed by half of the onion, half of the tomatoes, and all of the mushrooms in the prepared pan. Sprinkle garlic powder, then layer half of the vegan cheese. Add the rest of the onions as a layer, then spread all the lentils on top. Complete the layers with the remaining zucchini, tomatoes, and cheese.
  • Roast in the oven until the vegetables are tender and the cheese is melted or crispy, about 30 to 40 minutes. Allow to rest for 15 minutes before serving.
