Tender breaded chicken topped with briny capers and tangy lemon sauce, so delicious you'll want to savor every drop!
Ingredients:
  • 4 (4 ounce) boneless, skinless chicken breast halves
  • 1.5 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 0.667 cup all-purpose flour
  • 3 tablespoons olive oil, divided
  • 3 tablespoons butter, divided
  • 0.25 cup dry white wine, such as Pinot Grigio
  • 3 tablespoons capers, rinsed and drained
  • 0.75 cup chicken stock
  • 0.25 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 0.25 cup chopped fresh parsley
Instructions:
  • Butterfly the chicken breasts and gently flatten them to an even thickness. Season generously with salt and pepper all over. Coat each piece in flour, ensuring an even layer, and shake to remove any excess.
  • In a large skillet over medium-high heat, heat the oil and butter until just beginning to smoke. Sear half of the chicken without moving it until browned and easily released from the skillet, about 3 minutes. Flip and cook for 2 more minutes. Remove from the skillet and repeat the process with the remaining chicken. Place all the cooked chicken on a plate.
  • Lower the heat to medium and melt the remaining butter in the skillet. Stir in the wine and capers, scraping to release any browned bits. Let it simmer for 2 minutes to reduce slightly. Add the chicken stock, lemon juice, and lemon zest, stirring to combine. Bring to a simmer and continue cooking for 2 more minutes.
  • Cook the chicken in the skillet, turning occasionally in the sauce, until the chicken is fully cooked, the juices run clear, and the sauce thickens slightly, about 3 to 5 minutes.
  • Garnish with fresh parsley before serving.
