Foolproof roast chicken for juicy meat and crispy skin.
Ingredients:
  • 1 x 1.6 kg higher-welfare chicken
  • 2 medium onions
  • 2 carrots
  • 2 sticks of celery
  • 1 bulb of garlic
  • 1 bunch of mixed fresh herbs such as, thyme, rosemary, bay
Instructions:
  • Allow the chicken to sit at room temperature for 30 minutes before cooking. Preheat the oven to 240°C/475°F/gas 9. Roughly chop the vegetables without peeling them and break the garlic bulb into cloves without peeling them. Place all the vegetables, garlic, and herbs in a large roasting tray and drizzle with oil. Drizzle the chicken with oil, season with salt and pepper, and rub all over the bird. Position the chicken on top of the vegetables. Prick the lemon all over with a knife and place it inside the chicken along with the herbs. Roast at 200°C/400°F/gas 6 for 1 hour 20 minutes. Baste the chicken halfway through cooking and add water to the tray if the vegetables look dry. Let the chicken rest for 15 minutes after cooking. Carve the chicken and serve with gravy and roast vegetables.
