Perfect vanilla butter cake

Moist vanilla butter cake recipe that's foolproof and adaptable - perfect for any occasion.
Ingredients:
  • 220g butter, softened
  • 215g (1 cup) caster sugar
  • 8.80 gm Queen Organic Vanilla Extract
  • 3 eggs at room temperature
  • 225g (1 ½ cups)self-raising flour
  • 185ml (¾ cup) milk
  • 125g butter, room temperature
  • 2 tsp Queen Vanilla Bean Paste
  • 230g (1 ½ cups) icing sugar, sifted
Instructions:
  • Preheat the oven to 200C/180C fan forced and prepare a 20cm round cake pan by greasing it and lining with baking paper.
  • In a stand mixer with the paddle attachment, cream together the butter, sugar, and Queen Organic Vanilla Extract on medium-high speed for 5 minutes or until light and fluffy. Add the eggs one at a time, mixing well after each addition. Then mix in the flour and milk until just combined.
  • Transfer the mixture to the greased pan. Bake for 55 minutes to 1 hour, or until a toothpick inserted in the center comes out clean. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  • In a stand mixer fitted with the paddle attachment, cream the butter and Queen Organic Vanilla Bean Paste on medium-high speed for 6-8 minutes until light and creamy.
  • Mix in the icing sugar gently until just combined, then beat for 2-3 minutes until smooth. Spread the buttercream over the cake.
