Pesto-stuffed pork tenderloin: a succulent, family-friendly roast.
Ingredients:
  • 0.25 cup cream cheese, softened
  • 0.25 cup shredded Cheddar cheese
  • 2 slices cooked bacon, crumbled
  • 2 green onions, chopped
  • 2 tablespoons pesto sauce
  • 0.25 clove garlic, minced
  • 1 pinch dried parsley
  • 1 pork tenderloin, butterflied and pounded flat
  • 5 tablespoons butter
  • 0.5 cup white wine
  • 0.5 cube chicken bouillon
  • 0.5 cup heavy whipping cream
Instructions:
  • Preheat your oven to 350°F (175°C) and generously grease a baking dish.
  • Combine cream cheese, Cheddar cheese, bacon, green onions, pesto sauce, garlic, and parsley in a bowl. Spread the cheese mixture evenly over one side of the pork tenderloin. Roll the tenderloin around the filling like a jellyroll and season generously with salt and black pepper.
  • In a large skillet over medium-high heat, melt butter until sizzling. Sear rolled pork tenderloin in the butter until golden brown all around, about 7 to 10 minutes. Transfer the tenderloin to a baking dish, keeping the flavorful drippings in the skillet.
  • Roast in the oven until the pork reaches 145°F (63°C) at the center, which should take approximately 1 1/2 hours.
  • Heat the skillet with the reserved drippings over medium-high heat. Pour in white wine and bouillon, then bring to a simmer. Reduce the heat to low and add cream. Stir until the sauce thickens slightly, which should take about 5 minutes. Finally, pour the sauce over the tenderloin.
