Grilled Pesto-Stuffed Steaks

Pesto and cheese add mouthwatering flavor to juicy beef steak.
Ingredients:
  • 2 beef rib-eye steaks, 1 1/2 inches thick (about 2 pounds)
  • 1/4 cup basil pesto
  • 2 tablespoons finely shredded Parmesan cheese
  • 1 tablespoon olive or vegetable oil
Instructions:
  • Prepare grill for direct heat by heating coals or gas. With a sharp knife, slice horizontally into the side of each steak to create a pocket without cutting all the way through.
  • Combine the savory pesto and gooey cheese, then generously spread the mixture inside the pockets, sealing them shut. Finish by drizzling oil over the beef.
  • Grill the beef over medium heat, turning once, until medium doneness (12-14 minutes, 4-5 inches from the heat). Cut into thick strips before serving.
