Gnocchi cups - perfect for entertaining!
Ingredients:
  • 625g packet fresh potato gnocchi
  • 1/2 x 200g tub basil pesto
  • 62.50 ml finely grated parmesan cheese
  • 12 fresh baby basil leaves, to serve
Instructions:
  • Prepare the gnocchi according to the package instructions, then transfer them to a large bowl. Add the pesto and mix everything together until well combined.
  • Divide the 1/4 cup gnocchi mixture among 12 heatproof serving cups of 1/2 cup capacity. Sprinkle with Parmesan, season with pepper, and garnish each with a basil leaf before serving.
