Ingredients:
  • 1 bunch fresh coriander,leaves picked
  • 1 clove garlic, chopped
  • 187.50 ml shredded parmesan
  • 62.50 ml cashews, toasted
  • 56.88 gm pure olive oil
  • 200g prawns, cooked peeled, tail on
  • 250.00 ml iceberg lettuce, finely shredded
  • 62.50 ml coriander leaves, shredded
  • 18.20 gm extra virgin olive oil
  • 21.00 gm fresh lemon juice
Instructions:
  • Make pesto by combining coriander leaves, garlic, parmesan, and cashews in a food processor. Pulse until finely chopped. Season generously, drizzle in oil, and blend until smooth. Set aside for later use.
  • In a large bowl, coat the prawns with half of the vibrant pesto and mix well to ensure every bite is bursting with flavor.
  • Toss lettuce, shredded coriander, oil, and lemon juice together. Divide the mixture between serving spoons, top each with a prawn, and serve with the extra pesto on the side.
