Prawn and pesto pizza

Whip up a delicious prawn and pesto pizza in just 30 minutes!
Ingredients:
  • 2 Thin & Crispy Medium Pizza Bases
  • 600g fresh prawns or thawed frozen prawns, peeled leaving tails intact, deveined
  • 4 slices prosciutto
  • 80g bocconcini, coarsely torn
  • 1/2 red onion, finely shaved
  • 60g baby rocket leaves
  • 125.00 ml basil leaves
  • 20g parmesan
  • 40g pine nut
  • 80ml olive oil
Instructions:
  • Preheat your oven to 220C and prepare 2 baking trays by lining them with baking paper.
  • Combine the rocket, basil, parmesan, pine nuts, and garlic in a food processor. Pulse until finely chopped. With the processor running, slowly pour in the oil.
  • Lay out pizza bases on the baking trays and generously spread half of the pesto. Top with prawns, prosciutto, bocconcini, and onion, distributing them evenly. Bake for 12-15 mins until golden brown, prawns curl up, and change color. Enjoy!
  • Spread the remaining pesto over the pizzas.
