Easy weeknight meal: Roasted spaghetti squash with smoked sausage, bell pepper, onion, and pesto.
Ingredients:
  • 1 medium spaghetti squash, halved and seeded
  • 2 tablespoons olive oil, divided
  • 0.25 teaspoon salt
  • 1 (14 ounce) package Hillshire Farm® Smoked Sausage, bias-sliced 1/2-inch thick
  • 1 red bell pepper, chopped
  • 1 onion, chopped
  • 0.5 cup pre-made basil pesto
  • 0.25 cup grated Parmesan cheese
Instructions:
  • Preheat the oven to 400 degrees F. Use a fork to pierce the squash halves several times, then coat the inside with 1 tablespoon of olive oil. Season with salt and pepper.
  • Place the squash halves, flesh side down, on a foil-lined baking sheet. Bake for 45 to 50 minutes until the squash is very tender.
  • In a large skillet, heat 1 tablespoon of oil over medium heat. Cook the sausage, red pepper, and onion, stirring frequently, for 6 to 8 minutes or until the sausage is browned and the pepper and onion are crisp-tender.
  • Allow the baked squash to cool slightly. Using a fork, shred the insides. Transfer the spaghetti squash to a skillet and cook while stirring until heated through, approximately 2 minutes.
  • Just before serving, gently fold in the vibrant pesto and generously sprinkle with aged Parmesan cheese.
