Stuffed feta and basil pork chops with balsamic glaze - a simple and flavorful family favorite!
Ingredients:
  • 3 tablespoons crumbled feta cheese
  • 2 tablespoons chilled basil pesto
  • 1 tablespoon toasted pine nuts
  • 4 bone-in pork loin chops, 1 1/4-inch thick
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon minced garlic
  • 0.5 teaspoon red pepper flakes
  • 0.25 teaspoon ground thyme
  • 2 tablespoons balsamic vinegar
Instructions:
  • Preheat the oven to 375°F (190°C) for the perfect cooking temperature.
  • Combine feta cheese, basil pesto, and pine nuts in a bowl. Cut a 3-inch slit into the side of each pork chop, creating a pocket for stuffing, about 2 inches deep and 1/4-inch away from the bone. Fill the pork chops with the pesto mixture and secure with toothpicks.
  • Combine black pepper, oregano, garlic, red pepper flakes, and thyme in a small bowl. Massage the spice mix onto both sides of the chops, then transfer them to a shallow baking dish.
  • Roast the chops in the preheated oven until golden brown and the stuffing is heated through, approximately 40 minutes. Use an instant-read meat thermometer to ensure the stuffing reaches 145 degrees F (63 degrees C). Finish by brushing the chops with balsamic vinegar and return to the oven for an additional 5 minutes to create a flavorful glaze.
