Vibrant and flavorful pesto recipe packed with fresh herbs.
Ingredients:
  • ½ a clove garlic
  • 1 big bunch of fresh basil
  • 1 handful of pine nuts
  • 1 good handful of freshly grated Parmesan cheese
  • extra virgin olive oil
  • 1 lemon optional
Instructions:
  • Peel the garlic and crush it with a pinch of sea salt in a mortar and pestle. Add basil leaves and crush to a paste (or pulse in a food processor). Mix in pine nuts (toast lightly if desired) and crush again. Stir in half of the Parmesan cheese and drizzle in enough oil to make a smooth sauce. Mix in most of the remaining cheese and season with salt and black pepper. Adjust the consistency with more cheese or oil as needed. Finish with a squeeze of lemon juice for a hint of acidity, if desired.
