Japanese-inspired chicken wings marinated in soy sauce, rice vinegar, brown sugar, and ginger for a unique flavor twist.
Ingredients:
  • 1 cup Japanese soy sauce
  • 1 cup tightly packed brown sugar
  • 0.5 cup pineapple juice
  • 0.25 cup sake
  • 0.25 cup rice vinegar
  • 8 cloves garlic, crushed
  • 1 tablespoon grated ginger
  • 1 teaspoon monosodium glutamate (MSG)
  • 0.5 teaspoon Korean red pepper flakes
  • 0.5 teaspoon toasted sesame seeds
  • 2 pounds chicken wings
Instructions:
  • In a small saucepan, mix soy sauce, brown sugar, pineapple juice, sake, rice vinegar, garlic, ginger, monosodium glutamate, red pepper flakes, and sesame seeds. Simmer for 10 minutes, then cool the sauce off the heat.
  • Cut the wings at the joint to create drumettes and place them in a large resealable plastic bag. Add the sauce to the bag and marinate in the refrigerator for at least 3 hours, or up to overnight.
  • Begin by heating the grill to medium heat and greasing the grate lightly. Take the chicken wings out of the sauce, and grill them until they are nicely browned, approximately 5 minutes on each side.
  • Pour the glorious sauce into a saucepan and let it come to a gentle simmer. Allow it to bubble away for 5 minutes, infusing the air with irresistible aromas.
  • Preheat the oven to 350 degrees F (175 degrees C) and place the chicken wings in a large baking dish in a single layer. Pour the sauce over the wings.
  • Roast the wings in the oven, making sure to turn and baste them regularly, until they are golden brown, for about 1 hour.
