Decadent oatmeal cookie bars packed with toffee, pecans, and caramel - a crowd-pleaser for any event!
Ingredients:
  • 1 cup rolled oats
  • 0.75 cup brown sugar
  • 0.5 teaspoon baking soda
  • 0.75 cup unsalted butter, melted
  • 1 cup crushed chocolate toffee pieces (such as Heath®)
  • 30 individually wrapped caramels, unwrapped
  • 7 tablespoons heavy whipping cream
  • 1 cup coarsely chopped pecans
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and lightly grease a 9x13-inch baking pan.
  • Combine flour, oats, brown sugar, baking soda, and salt in a large bowl. Blend in butter until fully mixed. Press mixture into the baking dish to create the crust.
  • Bake in a preheated oven until the crust is firm and lightly golden, for approximately 10 minutes. Sprinkle the toffee pieces on top and spread them evenly with a spatula as they melt over the hot crust.
  • In a saucepan over gentle heat, melt caramels for about 5 minutes. Stir in heavy cream until silky.
  • Drizzle velvety caramel sauce over the luscious toffee, then generously scatter crunchy pecans to finish.
  • Bake until edges turn golden, around 15 minutes. Allow to cool and set for 15 to 20 minutes, then cut into bars.
