Indulgent dark chocolate chip oat cookies with a rich blend of butter and coconut oil.
Ingredients:
  • 1 cup butter
  • 6 tablespoons coconut oil
  • 0.75 cup packed brown sugar
  • 1 tablespoon packed brown sugar
  • 2 eggs
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.75 teaspoon salt
  • 3 cups quick-cooking oats
  • 1 cup dark chocolate chips
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • In a saucepan over gentle heat, melt the butter and coconut oil together, stirring occasionally, for about 2 to 3 minutes. Let cool before using.
  • Combine 3/4 cup plus 1 tablespoon brown sugar, white sugar, eggs, and vanilla extract in a mixing bowl.
  • Mix together the flour, baking soda, and salt in a separate bowl. Add this mixture to the egg mixture and mix until well combined. Fold in the oats and chocolate chips.
  • Shape generous spoonfuls of cookie dough into balls and arrange them 2 inches apart on ungreased baking sheets.
  • Bake in the preheated oven for 12 minutes until edges are set. Let cool on the cookie sheets for 2 minutes, then transfer to wire cooling racks.
