Norwegian Pepperkaker: Small spiced cookies with ginger, cinnamon, cardamom, and pepper.
Ingredients:
  • 4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon ground white pepper
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground cardamom
  • 0.5 teaspoon ground ginger
  • 0.75 teaspoon salt
  • 0.75 cup butter, softened
  • 1.25 cups packed brown sugar
  • 2 eggs
  • 0.75 cup finely chopped almonds
Instructions:
  • Preheat oven to 350°F.
  • Mix the dry ingredients together and set them aside.
  • In a separate bowl, cream together butter and sugar until light and fluffy. Then, add eggs one at a time, beating well after each addition.
  • Incorporate dry ingredients gradually, adding 1/2 cup at a time. For extra flavor, include almonds.
  • Shape the mixture into one-inch balls and place them one inch apart on an ungreased baking sheet. Bake in the oven for 11 to 14 minutes.
  • Transfer the mixture into airtight containers and refrigerate for 3 days to enhance the flavors.
