German Christmas spice cookies - Pfeffernüsse: spiced with black pepper, cardamom, cinnamon, cloves, ginger, and nutmeg.
Ingredients:
  • 0.5 cup molasses
  • 0.25 cup honey
  • 0.25 cup shortening
  • 0.25 cup margarine
  • 4 cups all-purpose flour
  • 0.75 cup white sugar
  • 0.5 cup brown sugar
  • 2 teaspoons anise extract
  • 2 teaspoons ground cinnamon
  • 1.5 teaspoons ground cardamom
  • 1.5 teaspoons baking soda
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground ginger
  • 1 teaspoon ground black pepper
  • 1 cup confectioners' sugar for dusting
Instructions:
  • Combine molasses, honey, shortening, and margarine in a saucepan over medium heat. Stir continuously until creamy.
  • Cool the mixture to room temperature, then mix in the eggs.
  • In a large bowl, mix together flour, white sugar, brown sugar, anise, cinnamon, cardamom, baking soda, cloves, nutmeg, ginger, black pepper, and salt.
  • Mix in the molasses mixture until fully incorporated. Chill dough in the refrigerator for approximately 2 hours until cold.
  • Preheat your oven to 325°F (165°C).
  • Shape dough into petite acorn-sized spheres and arrange 1 inch apart on baking sheets.
  • Bake in the preheated oven for 10 to 15 minutes until the edges are firm with slight cracking. Allow the cookies to cool on the baking sheets briefly before transferring them to a wire rack to cool completely.
  • Sprinkle the cooled cookies with confectioners' sugar and then store them in an airtight container.
