German spice cookies (pfeffernusse)

Spicy German holiday cookies, pfeffernüsse, packed with flavor.
Ingredients:
  • 625.00 ml plain flour
  • 1.25 gm ground cinnamon
  • 1/2 tsp ground allspice
  • 0.63 gm ground nutmeg
  • Pinch of ground cloves
  • 1/4 tsp ground black pepper
  • 125g unsalted butter, softened
  • 135.00 gm brown sugar
  • 86.88 gm molasses
  • 150.00 gm icing sugar mixture
Instructions:
  • Preheat your oven to 180C/160C fan-forced and prepare two baking trays with baking paper.
  • In a medium bowl, combine flour, spices, and bicarbonate of soda, then set aside. With an electric mixer, cream together butter, brown sugar, and molasses until fluffy for 3 to 4 minutes. Add the egg and beat until combined. Gradually mix in the flour mixture until fully incorporated.
  • Roll level tablespoons of cookie dough into balls, spacing them 5cm apart on lined baking trays. Bake for 12 to 15 minutes, or until cookies are golden and firm to the touch with a slight crack. Allow the cookies to cool on the trays for 10 minutes before serving.
  • In a bowl, add icing sugar. Gently coat slightly warm cookies in batches with the sugar until well covered. Shake off any extra sugar and place cookies on a wire rack over a baking tray to cool. Serve as desired.
