Delicious pickled asparagus spears with a unique flavor, perfect for enhancing Bloody Marys at my restaurant.
Ingredients:
  • 1 bunch fresh asparagus spears
  • 1 cup water
  • 1 cup white wine vinegar
  • 0.25 cup brown sugar
  • 4 cloves garlic, crushed
  • 1 jalapeno pepper, seeded and julienned
  • 4 sprigs fresh thyme
  • 2 tablespoons Old Bay Seasoning TM
  • 2 bay leaves
  • 1 teaspoon salt
  • 6 whole black peppercorns
Instructions:
  • Trim the ends of the asparagus and gently place them in a 1-quart jar, leaving some space between each spear.
  • In a saucepan, mix the water, white wine vinegar, brown sugar, garlic, jalapeno, thyme, bay leaves, salt, and peppercorns. Bring to a vigorous boil for 1 minute.
  • Pour the steaming liquid over the asparagus in the jar until the tips are submerged. Cover and let it cool to room temperature. Refrigerate for 24 hours to enhance the flavors before serving.
