Spicy homemade pickled asparagus: Fresh spears infused with red pepper, garlic, and mustard seed.
Ingredients:
  • 1 pound thick asparagus spears, trimmed
  • 1 tablespoon minced garlic
  • 2 teaspoons crushed red pepper flakes
  • 1 teaspoon mustard seed
  • 0.5 teaspoon pink peppercorns
  • 1.75 cups distilled white vinegar
  • 1 cup water
  • 1 tablespoon salt
  • 1 teaspoon white sugar
Instructions:
  • Layer the trimmed asparagus in a quart-sized canning jar with garlic, pepper flakes, mustard seed, and peppercorns.
  • In a medium saucepan over medium heat, bring vinegar, water, salt, and sugar to a boil. Simmer for 5 minutes, then turn off the heat.
  • Drizzle the tangy vinegar mixture generously over the fresh asparagus. Secure the lid tightly to lock in all the flavors and allow it to rest until perfectly sealed, approximately 1 hour.
  • Refrigerate for a minimum of 2 days to pickle.
