Transform beef with sweet, savory Korean BBQ marinade in 30 mins.
Ingredients:
  • 52.50 gm soy sauce
  • 30.00 gm caster sugar
  • 3 tsp sesame oil
  • 650g beef steak
  • 500g chinese cabbage
  • 1 large carrot, peeled, cut into matchsticks
  • 40.00 ml rice wine vinegar
  • 1 tsp fresh ginger, finely grated
  • 1/4 tsp dried chilli flakes
  • 13.80 gm grapeseed oil
  • 1 bunch green shallots, ends washed
  • Toasted sesame seeds, to serve
  • Steamed rice, to serve
Instructions:
  • In a bowl, mix together 2 tablespoons of soy sauce, 3 teaspoons of sugar, 2 teaspoons of sesame oil, and 1 minced garlic clove. Season with pepper, add the steak, and coat well. Let it marinate.
  • Place the cabbage and carrot in a heatproof bowl. In a saucepan over low heat, combine vinegar, ginger, chili, remaining sugar, sesame oil, and garlic. Stir and cook for 1 minute until sugar dissolves. Bring to a simmer and let it simmer for 2 minutes. Pour over cabbage mixture, toss well, and let it stand for 10 minutes before serving.
  • Preheat a chargrill pan or barbecue over high heat. Remove excess marinade from the steak, then drizzle with 2 tsp grapeseed oil. In a bowl, mix shallot with the rest of the grapeseed oil and soy sauce until coated. Grill the steak for 1-2 minutes per side for medium doneness. Let it rest in a bowl. Grill the shallot for 3 minutes until charred and tender.
  • Garnish the steak, shallot, and cabbage mixture with sesame seeds and serve alongside steamed rice.
