Experience the sizzling trend of burrito bowls! Load tortillas with spicy mince, beans, avocado, salsa, and cheese for a quick and delicious Mexican meal.
Ingredients:
  • 4 flour tortillas
  • 500g premium beef mince
  • 1 onion, chopped
  • 425g can chopped tomatoes
  • 420g can kidney beans, drained
  • 35g pkt burrito seasoning mix
  • 1 avocado, halved, stone removed, diced
  • 420g can corn kernels, rinsed, drained
  • 1 tomato, chopped
  • 40.00 ml chopped fresh coriander
  • 1 lime, juiced
  • Salt & freshly ground pepper
  • 40g cheddar cheese
  • Sour cream, to serve
Instructions:
  • Preheat the oven to 180°C. Line four heatproof noodle bowls with tortillas, folding them to form bowl shapes. Bake for 20 minutes, or until golden. Gently remove the tortilla shells from the bowls.
  • Heat oil in a large saucepan over medium-high heat. Cook mince and onion until browned, about 5 minutes. Stir in canned tomatoes, kidney beans, and seasoning mix. Simmer until thickened, about 3 minutes.
  • Mix together the ripe avocado, sweet corn, juicy tomato, fresh coriander, and zesty lime juice until well combined. Season with a pinch of salt and a sprinkle of pepper to bring out all the flavors.
  • Spread the mince mixture evenly over the tortilla shells. Sprinkle with cheddar, avocado salsa, and a dollop of sour cream. Serve fresh and hot.
