Pickled cucumber, rollmops & rye

Ingredients:
  • 2 telegraph cucumbers, thinly sliced crossways
  • 1 red onion, halved, thinly sliced
  • 600ml white vinegar
  • 440g (2 cups) caster sugar
  • 1 tsp caraway seeds
  • 8 rollmops, to serve
  • Dark rye bread, to serve
  • Vodka shots, to serve
Instructions:
  • Mix the cucumber and onion in a bowl.
  • In a saucepan over medium heat, combine vinegar, sugar, and caraway seeds. Bring to a boil, then simmer uncovered for 5 minutes on medium-low heat. Take off the heat and let it cool for 15 minutes before using.
  • Drizzle the vinegar mixture over the cucumber mixture and let it marinate for 1 hour.
  • Transfer pickled cucumbers to a serving dish and artfully assemble rollmops and rye on a platter. Accompany with optional vodka shots for a delightful presentation.
