Pickled extra large eggs in a flavorful brine with options for added heat or spice - a bar favorite now scaled for your home kitchen.
Ingredients:
  • 12 extra large eggs
  • 1.5 cups distilled white vinegar
  • 1.5 cups water
  • 1 tablespoon pickling spice
  • 1 clove garlic, crushed
  • 1 bay leaf
Instructions:
  • In a medium saucepan, gently nestle the eggs and cover them with cold water. Bring the water to a boil, then promptly take it off the heat. Allow the eggs to rest in the warm water for 10 to 12 minutes. Transfer the eggs from the hot water, cool them down, and then peel.
  • Combine vinegar, water, and pickling spice in a medium saucepan over medium heat. Bring to a boil, add garlic and bay leaf, then remove from heat.
  • Pour the hot vinegar mixture over the eggs in sterile containers, seal them, and refrigerate for 8 to 10 days before enjoying.
