Pickled Grilled Red Onions

Sweet and tangy onions elevate grilled chicken and burgers.
Ingredients:
  • 2 small red onions
  • 0.5 cup cider vinegar
  • 0.25 cup sugar
  • 1 teaspoon salt
Instructions:
  • Preheat your outdoor grill to high heat and oil the grate lightly.
  • Peel onions and trim root ends slightly. Quarter onions, keeping layers intact with the root ends. Secure layers with a toothpick as needed for grilling.
  • Cook onions on the grill until they develop a beautiful char, approximately 5 minutes. Transfer the grilled onions to a nonreactive bowl.
  • In a small non-reactive saucepan over medium heat, warm vinegar, sugar, and salt until the sugar dissolves. Pour the hot mixture over the grilled onions and let sit for 10 to 15 minutes. Remove onions from the liquid and refrigerate until needed.
