Tangy pickled green mangoes with Asian flair using 5 simple ingredients.
Ingredients:
  • 7 raw green mangoes, peeled and sliced 1-inch thick
  • 0.25 cup salt, divided
  • 3 cups water
  • 3 tablespoons water
  • 1 tablespoon vinegar
Instructions:
  • In a big bowl, toss together mango slices and 3 tablespoons of salt. Allow to rest for approximately 15 minutes.
  • In a large pot, mix together 1 tablespoon of salt, 3 cups plus 3 tablespoons of water, and sugar. Bring the mixture to a boil, stirring until the sugar dissolves. Take the pot off the heat and stir in the vinegar. Let the brine cool for about 15 minutes before using.
  • After draining mango slices, transfer them into large jars. Pour the cooled brine over the mango slices, making sure they are fully covered. Seal the jars and refrigerate until the mango turns yellow, which will take approximately 2 days.
