Mexican-inspired grilled cheese with pico de gallo, served with tomato soup. Delicious lunch option.
Ingredients:
  • 1 tomato, diced
  • 0.5 white onion, diced
  • 2 tablespoons chopped fresh cilantro, or to taste
  • 0.5 lime, juiced
  • 3 tablespoons softened butter, or as needed
  • 10 slices white bread
  • 10 slices provolone cheese
Instructions:
  • Combine the tomatoes, onion, cilantro, lime juice, salt, and pepper in a bowl.
  • Spread butter on one side of each bread slice. Place the bread slices, butter-side down, on a work surface. Add 1 slice of provolone cheese to each bread slice and spoon pico de gallo onto 5 of the bread-cheese slices. Finish by topping each pico de gallo layer with the remaining bread-cheese slices, butter-side up.
  • Preheat a skillet over medium heat, then grill each sandwich until golden brown and the cheese is melted, about 3 to 4 minutes per side.
