Cinnamon sugar pie crust cookies - quick and delicious!
Ingredients:
  • 1.25 cups all-purpose flour
  • 0.25 teaspoon salt
  • 0.33333334326744 cup shortening
  • 2 tablespoons warm water, or as needed
  • 1 tablespoon shortening
  • 0.25 cup white sugar
  • ground cinnamon
Instructions:
  • Preheat your oven to a piping hot 450 degrees F (230 degrees C) and prepare a baking sheet with a quick spray of cooking spray or line it with parchment paper.
  • Combine flour and salt in a bowl. Using a pastry cutter, mix in 1/3 cup of shortening until pea-size balls form. Create a well in the center, and gradually add water a few teaspoons at a time, stirring with a fork to form a dough. Ensure each addition of water is fully incorporated before adding more. Once 3/4 of the flour mixture forms a stiff dough, knead in a little more water by hand and shape the dough into a ball.
  • On a generously floured surface, use a floured rolling pin to roll the dough into a 12 by 16-inch rectangle, about 1/8-inch thick. Evenly spread 1 tablespoon of shortening over the dough, then generously sprinkle with sugar and cinnamon. Roll the dough tightly into a log shape. Using a sharp knife, slice the log into 3/4-inch thick pieces and place them on a baking sheet.
  • Place the cookies in the preheated oven and bake until lightly browned and sizzling on the bottom, around 8 minutes. Then, cool them on paper towels and freeze any extras for future enjoyment.
