Enhance your Indian feast with this flavorful side dish.
Ingredients:
  • 50g unsalted butter
  • 2 medium brown onions, finely chopped
  • 6 cardamom pods, bruised
  • 1/2 tsp ground turmeric
  • 600.00 gm Basmati rice, rinsed, drained
  • 1275.00 gm chicken style liquid stock
  • 125.00 ml slivered almonds, toasted
Instructions:
  • In a large saucepan over medium heat, melt butter. Add onion and garlic, cook and stir until onion softens, about 3 minutes. Stir in cardamom and turmeric; cook for 1 minute until fragrant. Add rice and stir to coat for 1 minute.
  • Pour in flavorful stock and bring it to a lively boil. Lower the heat, cover tightly, and let it gently simmer for 15 to 18 minutes until the rice is perfectly cooked and the liquid is absorbed. Take it off the heat, fluff the rice with a fork, and let it sit covered for 5 minutes until tender. Finish by mixing in crunchy almonds and it's ready to serve.
