Pina colada pineapple with passionfruit sorbet

Quick and easy dessert with flavors of a festive cocktail.
Ingredients:
  • 1/2 ripe pineapple, peeled, cut into 12 slices
  • 40.00 ml Malibu (coconut liqueur)
  • 100g (1/2 cup, firmly packed) brown sugar
  • 30g (1/4 cup) shaved coconut
  • Bought passionfruit sorbet, to serve
Instructions:
  • Preheat the grill to high heat. Line a baking tray with foil and arrange the pineapple slices in a single layer. Drizzle both sides of the pineapple with Malibu.
  • Spread sugar on a plate, coat both sides of pineapple slices, then bake under the grill until sugar caramelizes, approximately 5 minutes per side.
  • Toast the coconut in a frying pan over medium heat, stirring often, for about 2 minutes until lightly browned.
  • Divide the tropical pineapple mixture onto plates, sprinkle with shredded coconut, and serve alongside the tangy passionfruit sorbet.
