Delicious no-bake dessert for a refreshing treat on hot days - crispy, velvety, and chilled.
Ingredients:
  • 250ml pine-lime flavoured cordial
  • 750ml (3 cups) water
  • 12 large scoops of good-quality vanilla ice-cream
  • 6 Corinthian Wafers, to serve
Instructions:
  • Mix the cordial and water in a jug, then pour into a 20 x 30cm slice pan. Cover with foil and freeze for 2 hours until edges are icy. Use a fork to break up the mixture, cover, and freeze for an additional 3 hours. Every hour, scrape with a fork until firm.
  • Scoop the granita and ice cream into individual glasses. Garnish with wafers before serving.
